Summertime salads are truly the best of both worlds. Everything is so bright and fresh that it just tastes better! Unlike baking, you can customize ingredients without compromising the entire dish. Win/win! Finish with a simple vinaigrette and your choice of protein and you have a healthy dinner that is sure to be a hit with the family.
Our featured peach recipe is a peach, blueberry and goat cheese salad with a peach/brown sugar vinaigrette dressing.
The one rule about summer salads is:
There are no rules to summer salads!
Like blueberries? Extra goat cheese? You do you!
For the Salad:
In a large bowl, combine the below ingredients in a ratio that is complimentary to your taste preference.
Toss with dressing or arrange dry on a plate with plenty for dipping.
Ingredients:
Choice of lettuce- we used a mix of baby greens
Peaches (ripe, but firm)- sliced thin
Blueberries- as many as you want!
Goat cheese crumbles
Sliced almonds
Red onion- sliced thin
For the Dressing:
Combine all ingredients in a food processor and blend until smooth.
Because of the peaches, the end result will be thicker than a traditional oil and vinegar dressing.
1 ½ peaches (ripe)- peeled/pitted and cubed
¾ cup vegetable oil
½ cup white vinegar
1 TBSP- Dijon mustard
4 TBSP- Brown Sugar
Salt, pepper and garlic powder- to taste
Make it a meal? Add some grilled chicken for a complete dish!
